Traditionally lunch has been the main meal of the day with just sandwiches for dinner, but this is now changing.
German food is not the same in different parts of the country. Generally the cuisine in the north is healthier and includes fish from the North Sea and the Baltic. Authentic German Bread (Bauernbrot)
Yields 1 big or 2 small loaves. Ingredients: 1 1/2 ounces compressed fresh yeast, 2 tablespoons sugar, 1-quart warm water, 8 cups all-purpose flour, 8 cups white rye flour, 1 teaspoon white sugar, 2 tablespoons salt, 2 cups warm water
To make this sourdough German bread, crumble the yeast in a bowl. Whisk in the sugar and the warm water. Slowly mix in 4 cups of all-purpose flour until there are no lumps. Cover the bowl with a towel and leave to stand at room temperature for 24 hours.
The following day stir the mixture and then leave for another 24 hours.
After the next 24 hours get a bowl and stir together the rye flour, the other 4 cups of all-purpose flour, sugar, and salt. Mix this into the dough and stir in the 2 cups of warm water.
Knead the dough for between 15 – 20 minutes. If it’s too hard to add a little extra water. Then put it in a bowl, cover and leave to double in size. This should take 1 – 2 hours.
Knead the dough for another 5 minutes and shape into either 1 or 2 loaves. Put them on baking sheets and leave to rise for 1 hour.
Put the oven on at 425 degrees F. Bake one loaf for 1 and a half hours and 2 for 45 minutes. Leave to cool and then serve. It’s delicious served at a German breakfast.
Authentic German Food – Potato Salad
Potato salad is a very popular German food and here we have a great recipe for it.
Ingredients: 3 cups chopped and peeled potatoes, 4 slices bacon, 1 diced onion, 1/8 teaspoon ground black pepper, 1 teaspoon salt, 3 tablespoons white sugar, 2 tablespoons water, 1/4 cup white vinegar, 1 tablespoon chopped fresh parsley.
Bring the potatoes to the boil and simmer for 10 minutes. Drain them and put them aside to cool.
Fry the bacon until crisp and set aside.
Put the diced onion in the bacon fat and cook until soft and browned. Add the salt and pepper, the sugar, the water, and the vinegar. Bring this to the boil and add the potatoes and parsley. Put in half the bacon and heat through. Put it on a serving dish and sprinkle the rest of the bacon on top. Serve warm. It’s delicious with a fish dish.
