Mexican food includes corn, beans, squash, cilantro and chili peppers. When the Spanish conquered Mexico in the 16th century, they brought their own food with them and this became incorporated into Mexican cuisine. The cheese was an important staple the Spanish brought as was meat.

The Mexicans specialize in tortilla wraps like burritos, enchiladas and fajitas and also tacos which come in a hard shell. Stews such as birria are popular. This is a spicy stew made from goat or mutton. Refried beans often accompany their meals.

Dips are very popular and eaten with tortilla chips. Guacamole is one of the best known dips in the world and the Mexicans have salsa of course as well as cheese dips like queso flameado.

The Mexicans love their desserts as well and churros are one of the best-known desserts as are flans which are similar to crème caramel.

Guacamole is an avocado-based dip, spread, or salad first developed by the Aztecs and now is very popular in Mexico. In addition to its use in modern Mexican cuisine, it has become part of international and American cuisine. Guacamole now is a dip, condiment, and salad ingredient.

Ingredients

3 peeled, pitted and mashed avocados

1 teaspoon salt

1 juiced lime

2 diced plum tomatoes

1 teaspoon minced garlic

1/2 cup diced onion

3 tablespoons fresh cilantro

1 pinch ground cayenne pepper

Instructions

Mash together the avocados, salt, and lime juice.

Mix in the tomatoes, garlic, onion, and cilantro.

Stir in the cayenne pepper.

Refrigerate for one hour and then serve.
