The word braai is Afrikaans for “barbecue” or “roast”. Braai Grill popular in Namibia, South Africa, Zimbabwe, and Zambia. For a braai you need to use an open fire.

South African braai typically include boerewors, kebabs, marinated chicken, chops and steaks pork and lamb, sausages of different flavors and thickness, and possibly even a rack or two of spareribs. Fish and seafood are popular in coastal areas.

The other part of the braai traditions is pap or the krummelpap (“crumb porridge”). This porridge traditionally eats with the meat and with tomato and onion sauce. This meal is eaten outside by the braai fire.

Take chicken wings, Braai spices, olive oil, and lime. In this recipe Braai Grill Spice Dry Rub Wings using dry rub method (an alternative to soaking/marinade the meat prior to cooking) to cook it.

Wash and pat dry the chicken wings with a kitchen towel.

If you cooking at home, preheat oven at 160 C degrees fan force. Line baking foil on a baking tray. Place the chicken wings skin side up on the tray. Make sure they don’t overlay each other.

If you cook braai grill outdoors, prepare an open fire and hot barbecue coals.
Sprinkle the spice rub generously over the wings, ensure that all ends are covered including the wingtip. Next drizzle olive oil all over the wings.
When the oven is hot, place the tray into the oven. Set the timer to 1 hour. Start off by baking the wings (skin side up) for 30 minutes.

When 30 minutes is up, take the tray out from the oven. Using a thong, rub the wings onto the oil/juice that is on the tray, then turn the wings skin side down. Sprinkle the spice rub on the wings. Place it back into the oven and bake for another 15 minutes.

In the last 15 minutes, take the braai grill wings out and flip them over (back to skin side up). Squeeze half a lime over the wings. Place it back to the oven and turn the oven temperature to 200 C degrees to crisp the edges.

For an outdoor cooking place the wings on the grill grate. Cook for 15 min then turn on the other side for 15 min. At the end of cooking, drizzle the wings with lime juice.

Rest the braai grill wings for 5 minutes before serving.
