For this is Russian style cured salmon you need some beautiful fresh salmon, that’s 300 grams there. That’s going to serve four people. Three heaped tablespoons sea salt.
It is not much. Most of that is going to come away but we need that salt to penetrate that fish to cure it.
This salt gives you the incredible delicate texture that allows you to slice it really thinly, easily and it looks and tastes amazing.
Then add secret ingredient of this cured salmon – one shot of vodka. This is traditional in Russia and Finland.
If you want to add more flavor in there, you can add one heaped tablespoon brown sugar.
Next, you can add half of the lemon or orange zest. Put salmon in the fridge for 5-10 hours. Then brush the salt off. After that, you can slice and serve the fish.
- 300 gram fresh salmon
- 3 tbsp sea salt
- 1 shot vodka
- 1 tbsp brown sugar
- 0.5 lemon zest
- Dry the salmon with a towel. Do not remove the skin.
- Mix salt with sugar. Sprinkle the container in which salmon will be cured with a mixture of salt and sugar (1/3 of the mixture). Sprinkle the rest of the mixture on top of the fish.
- Add vodka and half of the lemon zest.
- Put cured salmon in the fridge for 5-10 hours. Then brush the salt off.
