This peach ketchup recipe is popular in California. Make it and keep in the refrigerator to serve cold at any time. You can use fresh or canning peaches.
You need peach, large onion, white or cider vinegar, powdered cloves, powdered cinnamon, powdered allspice, salt, Tabasco sauce.
For Peach Ketchup boil down peaches with sirup in agate or enamel kettle to about 1/2 cup. If you use fresh peaches, slice them, and add 2 teaspoon sugar and 2 cups of water.
Wash peel and chop a large onion. Add onion to peaches and remaining ingredients. Cover. Boil slowly until onion and peaches are soft and the mixture is thick – about 1 hour. Stir frequently with wooden or enamel spoon.
Let cool slightly and put through a sieve. Pour into a 1-pint sterile glass jar, and store in the refrigerator.
Makes about 1 1/2 cups of Peach Ketchup.
